jicama tacos: a new favorite meal

My sister Dede told me about these jicama wraps from Trader Joes. I was skeptical- I don’t hate jicama, but I don’t really crave it. I do however feel better when I eat without wheat or a lot of corn flour in my diet, so I gave them a try! They are DELICIOUS! I actually think I would choose them for taste over a traditional tortilla.

My method:

  • 1 lb. ground turkey browned in a little bit of avocado oil & seasoned with (2 cubes of frozen garlic, dried chili powder, onion powder, salt, pepper, and cumin to taste)
  • cheese (Monterey Jack, Pepper jack or any Mexican blend)
  • sour cream
  • fresh lime
  • cilantro
  • shredded romaine or cabbage (I love it both ways!)
  • Cholula sauce

I prefer the wraps cold from the refrigerator…but you could try to air fry them. I tried to warm them in a pan with a little bit of oil and preferred them cold. Bonus: for two wraps they are only 3g of carbs and 15 calories!
